looking forward

to what's in store for this week because
 so far, i'm loving monday. 
 today my munchkins and I said bye to daddy before work
 and geared up for a day filled with baking & cooking.
 we started off with oatmeal lace cookies, 
 which I must say are my new favorite cookie. 
 they are dynamite and I'll be posting the recipe below. 
I got the idea from the yellow pepper's blog and she inspired me to make them!
 One batch made 4 dozen cookies so we made a special delivery 
 to uncle JJ and aunt emmy as well as nana and papa!
 very exciting. 
 of course we rounded up our trip with our usual frozen yogurt stop, 
 today- pomegranate/raspberry sorbet. 
 holy beyond moly delicious, really.
  we finally came home, prepared dinner and ate. 
 now I'm enjoying them play outside while I sit posting this and finishing
 up a few assignments for classes. 
 some things I'm looking forward to this week.
Parenthood finally returns with new episodes! I've been 
patiently waiting, and yes I'm obsessed.
An old friend who I haven't talked to in forever is pregnant with her second 
and she's having a baby shower- I did something homemade for her baby girl!
I'm learning about a new culture for the remainder of the 
semester in non-western art. very intriguing.
April is here, which means a few things coming soon to blog about!


     lacy oatmeal cookies
    • 1 cup quick cooking oats
    • 1/4 cup all-purpose flour
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons baking powder
    • 1 cup white sugar
    • 1/2 cup butter, softened
    • 1 egg
    • 1 teaspoon vanilla extract

    Preheat oven to 325 degrees. Cover baking sheets with foil,
    then coat the foil with a non-stick cooking spray.
    In a medium bowl, combine oats, flour, salt, and baking powder. 
    In a large bowl, cream sugar and butter until fluffy. Beat in egg and vanilla. 
    Mix in the flour and oat mixture until just combined. 
    Drop dough by teaspoonfuls onto the prepared
    baking sheets, 2 1/2 inches apart. Bake at 325 degrees for 8 to 10 
    minutes, or until edges turn golden.Cool, then peel cookies 
    off with your fingers. Be sure to re-spray baking sheets with 
    non-stick cooking spray between batches.
