for you & your munchkin!
here are some delicious snacks approved by two thumbs up
from my little lady and little man

cucumber salad
4 seedless cucumbers, peeled and thinly sliced 
2 Tbsp Rice Wine Vinegar
2 Tsp Sesame Seeds

1. Place all the ingredients in a bowl and stir to combine.
2. Refrigerate for an hour for cucumbers to soften (optional)
3. Serve!

italian-asparagus sticks
1 Cup Whole Wheat Panko or Bread Crumbs
1 Tbsp Italian Herbs 
1/2 Tsp Salt
1/2 Tsp Garlic Powder
2 Large Eggs
1/4 Cup Flour

1 Bunch Asparagus, cleaned and stems removed.
1. Preheat oven to 450 degrees & coat a large baking sheet with cooking spray.
2. Mix the first 4 ingredients in a bowl.
3. Whisk the egg in a separate bowl.
4. Place the flour in another bowl.
5. Make an assembly line with the bowls. 
Dip the asparagus first into the flour, 
then the egg and finally into the bread crumb mixture, 
coating evenly and repeating with all the sticks.
6. Place all of the coated sticks on the baking sheet/rack- 
not touching, spray lightly with oil and bake for 30-35 minutes 
or until the bread crumbs are golden.

*You can freeze these too! Just add at least 
another 3-5 minutes baking time!

 avocado herb dip
1 whole avocado
 2 Tbsp plain yogurt
 2 Tbsp of mayonnaise or Vegannaise
1 1/2 Tsp of lemon juice
 2 Tbsp of herbs of your choice!
*we did dill & chives!

1. put all of the ingredients in a food processor
 (could totally be done in a bowl, just mixed)
 2. blend until smooth, or mix until you get to your desired thickness.
 we love it chunky & with celery & apples.
3. enjoy it with your favorite veggies & fruits too!
  
 pea in a pop
1 Lb Bag frozen peas
Water

1. Place frozen peas in popsicle molds filling to the top.
2. Cover with cold water and place sticks in the molds.
3. Place in freezer for 3 hours or until frozen.
4. Serve!

  1. I had a friend who would bring cucumber salad to school in her lunch, it was vinegar and pepper I think. SO DELICIOUS and now I want to make some. I think I might try combining yours and her recipe. :D

  2. I love white vinegar and cucumber with pepper!! you're right, very delicious :) combining the two would be even more delicious, good idea!
