mozzarella & tomato crostini

what you need
french/Italian baguette: one
cherry tomatoes: one pint
mozzarella pearls (medium size): one container
salt and pepper: to taste
olive oil: two tablespoons


what to do
preheat oven to 350F.
cut baguette with bread knife into 1/4 inch slices
place on baking sheet.
 brush olive oil onto slices
 sprinkle with salt and pepper.
 bake for six minutes.

while the bread is in the oven toasting
cut mozzarella pearls into thirds
 you'll cut as many as you need for
 two pieces per slice of bread.
 now cut cherry tomatoes in thirds
 or halves if it works better.
 again, making enough to leave two
 pieces of tomato for each piece of bread. 
 sprinkle both with salt and pepper.

 take bread out of oven.
place tomato on bread first
 then mozzarella 
 and bake for eight minutes 
or until cheese is melted.
 drizzle a little olive oil over each piece
 and serve!

tip: it's also really good with 
a sprig of basil on top!
