munchkin vegan recipes!

 have fun cooking vegan in the kitchen
with your munchkin.
all of these can be made easily into
vegetarian and meat dishes.


Quinoa Garden Burgers
1/4 cup uncooked quinoa
1/4 cup dried red lentils
1-1/2 cups water
1/2 cup finely chopped walnuts
1/2 cup fresh whole wheat bread crumbs
1 (15-ounce) can chickpeas, rinsed, drained, lightly mashed
3/4 cup finely chopped celery
3/4 cup finely chopped red onion
1 cup finely chopped bell pepper
Salt and freshly ground black pepper to taste
 Mediterranean Eggplant Sandwiches
1 eggplant, stem end trimmed, cut into 1/2-inch slices
2 tablespoons olive oil
1 garlic clove, cut in half lengthwise
Salt and freshly ground black pepper
8 slices sprouted bread
Vegan mayonnaise to taste
1/2 cup roasted red pepper strips
1/2 cup chopped sun-dried tomatoes packed in olive oil
Balsamic vinegar (optional)
8 Fresh basil leaves, shredded
Shredded vegan cheese


Cashew Pineapple Carrots
1 fresh pineapple, cut and cubed
1/3 cup minced red onion
1/2 pound carrots, cut at a diagonal into 1/2-inch slices
1 tablespoon cornstarch
2 tablespoons water
1/4 cup chopped unsalted cashews


Vegan Red Lentil Dahl
1 cup red lentils, picked over and rinsed
3 cups water
1 tablespoon canola oil
1 onion, chopped
8 ounces sliced mushrooms
2 garlic cloves, minced
1 teaspoon garam marsala
1 (15-ounce) can coconut milk, shaken before opening
4 cups spinach leaves
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper to taste
