exploding chicken taquitos

what you need
One 10oz can 98% fat-free chunk white 
chicken breast in water, drained and flaked
  1/2 cup salsa
8 small (6-inch) yellow corn tortillas
1/3 cup shredded cheddar cheese
1/4 teaspoon dry taco seasoning mix
 
Optional
additional salsa
sour cream
lime wedges





 
note: I thought I picked up yellow corn tortillas 
but instead grabbed white- it was equally 
as delicious just not as crispy.
Also, it is totally optional to use
shredded or rotisserie chicken instead of canned.
you could also use tofu or add tons of 
vegetables like peppers and onions- 
I chose to follow this recipe
by what she does to see how they would come out.
It was actually really good the hungry girl way.
I did however, use my own taco seasoning 
made up by a pinch each of;
cumin, red pepper flakes, garlic powder, 
chili powder, sea salt, ground black pepper ,
onion powder and oregano. 


what to do
preheat your oven to 375-
in a medium bowl, mix the chicken and salsa 
until well combined then cover 
and refrigerate for fifteen minutes.


during this time you'll want to dampen two 
paper towels and place the tortillas between them. 
microwave for about one minute, 
until tortillas are warm and pliable and set aside.

remove chicken mixture from the fridge
and drain any excess liquid (I didn't have to do this)
 add cheese and taco seasoning and mix to combine.


prepare a baking sheet by spraying 
it with nonstick spray.

place one tortilla flat on a clean dry surface 
keeping the rest between the paper towels
and spoon about two heaping tablespoons of 
filling onto the tortilla. 
spread it evenly across the entire surface
and roll tortilla up tightly.
you can secure with toothpicks, if needed.
place seam side down on the baking sheet
and repeat with remaining tortillas and filling.





bake in the oven until crispy
about fourteen to sixteen minutes
 don't worry if they crack and "explode" a little!
that's what makes this recipe so fun.



allow to cool for five minutes.
 remove toothpicks, if used. 
 serve with additional salsa 
or sour cream for dipping 
and enjoy!

  1. Um... YUM! Joel has asked me 100 times what I want for dinner tonight (our plans changed, so our meal plan item is void) and I couldn't think of anything, until I read this! He is currently en route to get me a burrito! I'm certain it will not be as yummy and healthy as this, but you at least inspired me!
