Quinoa Garden Burgers
1/4 cup uncooked quinoa
1/4 cup dried red lentils
1-1/2 cups water
1/2 cup finely chopped walnuts
1/2 cup fresh whole wheat bread crumbs
1 (15-ounce) can chickpeas, rinsed, drained, lightly mashed
3/4 cup finely chopped celery
3/4 cup finely chopped red onion
1 cup finely chopped bell pepper
Salt and freshly ground black pepper to taste
1/4 cup dried red lentils
1-1/2 cups water

1 garlic clove, cut in half lengthwise

1/2 cup roasted red pepper strips
1/2 cup chopped sun-dried tomatoes packed in olive oil

1 (15-ounce) can coconut milk, shaken before opening
4 cups spinach leaves
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper to taste
3 cups water
1 tablespoon canola oil
1 onion, chopped
8 ounces sliced mushrooms
